🍽️ The essentials of Fallas gastronomy:
✔️ Valencian Paella - The star dish of the Valencian Community. Traditionally, it is cooked with chicken, rabbit, green beans (underscuttle), garrofón and rice from the Albufera. In Fallas, it is very common to see the falleros cooking it in the street in giant paella pans, keeping the tradition alive.

✔️ Pumpkin fritters - These fried sweets have a soft dough made with roasted pumpkin, flour, yeast and a touch of aniseed. They are fried until golden brown and crispy on the outside, but fluffy on the inside. The key is to eat them freshly made and coated in sugar.
